I have to admit that one of the most frustrating food challenges I have is granola. I check EVERYTIME I visit a new grocery store to try to find nut free granola and am usually unsuccessful. I know there are a few brands of granola available, but for the amount that we consume in my home, the cost was getting quite high. So I looked to find a granola that I could make at home and found this great recipe from Funky Food Allergies. Trisha uses nuts in her recipe but I would leave them out.
5 cups oatmeal (make sure it’s certified gluten-free)
1/4 cup applesauce or butter, oil
1/4 cup honey, agave nectar, maple syrup, cane syrup
3 T molasses
Several teaspoons of any or all of the following:
Cinnamon, Ginger, Nutmeg, Vanilla
Toss ingredients into a large crockpot and stir till combined. Cook on high for 3-4 hours but stir every 20-30 minutes. Vent lid with a wooden spoon or chopstick. About halfway through the cooking process is when you should throw in any coconut, nuts or seeds. I’ve had a batch burn the nuts long before the oats were toasted so I put mine in after a couple hours of cooking.
Once the oats are golden grown, pour granola on a baking sheet to cool. Store in an air tight container and enjoy.
