This cookbook is sure to activate your saliva glands. Just looking at some of these amazing photos was really enough to get us ready to start baking. And, its amazing that all of these recipes are gluten free, dairy free, wheat free, egg free, soy free, peanut free, treenut free and sesame free. Who ever said people with food allergies didn’t have choices? Authored by Cybele Pascal, this cookbook offers lots of choices for those with food allergies and food intolerances.
One of my favorite recipes the Banana Flax Muffins – I’m on a new health kick now and flax is one of my new foods of choice. These muffins were really easy to make. I left out the raisins as my kids complain everytime they see a raisin. I even packed one in my daughter’s lunch and she said she enjoyed it! We also have posted a recipe for Cybele’s Double Choco Chunk Cookies.
A great section in the book is called “How To Bake Allergen-Free” and Cybele provides many option for ingredients such as eggs. She offers 7 choices including a prune puree, banana and vegan yogurt. She also shows you how to replace dairy. Page 19 is the key reference in the book – the basic gluten-free flour mix. Cybele has spent years perfecting her recipes and really making sure the chemistry of all ingredients work well together.
